Vanilla Blueberry Banana Oatmeal

If you have a busy schedule and lifestyle like myself, then it is quite rare that you start the day with a bowl of oatmeal. Slow-cooked oatmeal can take some time to cook and clean up afterwards. However, this recipe takes only 5 minutes to make in the morning, and the leftovers taste just as delicious!

Interest in oatmeal has increased in recent years because of it’s many health benefits associated with it. Numerous studies have shown that oatmeal can lower cholesterol, reduce the risk of heart disease, and aid in weight loss. Oats consist of complex carbohydrates and water-soluble fiber, which slow digestion, stabilize blood sugar, and help you feel fuller longer. Oatmeal is also a great source of Vitamin E, Selenum, Zinc, Copper, Magnesium, Manganese, and Iron. 1/2 cup of coked oatmeal provides approximately 100 calories and plenty of vitamins and minerals.

This recipe is so beneficial because it is chock full of oats, fruit, honey, dairy, and nuts- a perfectly balanced meal! This recipe tastes best when using fresh farmer’s market blueberries and local honey. It is also a great pre-workout or pre-race meal to consume if you are active.  Enjoy!

Ingredients:

½ cup dried oats

¼ cup fat free milk (soymilk and almond milk also work well)

½ cup water

½ tsp salt

¼ fresh or frozen blueberries

1 tsp local honey

½ cup fat free vanilla yogurt

1 small banana, sliced

1 tbsp. ground flax seed

1 tbsp dried cranberries

1 tsp chopped almonds

Preparation:

1. Cook the oats in the milk and water, either on the stove top until the liquid is almost evaporated, or in the microwave for 2 minutes.

2. Add the next 6 ingredients and mix together. The heat of the oatmeal thaws the blueberries, and the added yogurt gives the temperature and consistency of a parfait.

3. Garnish with cranberries and chopped almonds.
