Simple Yet Delicious Roasted Beets!

I had never tasted a beet in my life until I moved to North Carolina. Last summer, I finally had the courage to try a beet salad at a local restaurant, and I have enjoyed them ever since! What have I been missing out on the past 24 years of my life? Roasted beets are a simple side dish to make, yet they become sweet and tender when cooked at a high temperature. This recipe serves 4-6 people, perfect for a family dinner.

Ingredients:

1 bunch small beets

3 tbsp. olive oil

3 cloves garlic, minced

½ tsp salt

1/8 tsp pepper

1 tbsp. balsamic vinegar

Preparation:

1. Preheat oven to 350 degrees Fahrenheit.

2. Wash beets well, peeling off any bad spots, leaving skins on. Remove the greens, if attached, and reserve for cooking later.

3. In a baking dish, toss beets with olive oil and garlic and sprinkle with salt and pepper.

4. Bake at 350 degrees F for 45-55 minutes until beets are tender when tested with the tip of a knife. Drizzle with balsamic vinegar and serve.
